Inspired by our Mango Ice Cream fragrance from the Sakura Blossom Festival Collection, our friend @happyhappynester shares a refreshing homemade ice cream treat recipe of her own!
Ingredients
• 1/2 cup plus 1 teaspoon mochiko sweet rice flour (50 grams)
• 100 ml water (70 grams)
• 1/4 cup granulated sugar (50 grams)
• Food coloring (optional)
• 4 small scoops ice cream
• Cornstarch
Instructions
Ice Cream Centers
Line a baking sheet with parchment paper. Using a small cookie dough scoop, pack ice cream in the scoop and place it on the paper. Place ice cream balls in the freezer to chill for at least 2 hours.
Mochi Dough
1. First, measure and add the water to a bowl. Next, add the mochiko flour. And finally, add the granulated sugar to the bowl. Mix all the ingredients until smooth.
2. To cook mochi dough, place rice mixture in a frying pan. Heat pan over a medium to low flame. Cook for 2 minutes, constantly stirring with a rubber spatula. Once the mochi is cooked, transfer mochi to a plate and place it in the refrigerator to cool for 5 minutes (recommendation: place a trivet or potholder under the plate of hot mochi).
Roll Out Mochi
1. Place a sheet of parchment paper on a cookie sheet and dust it with quite a bit of cornstarch.
2. Cover your clean countertop with lots of cornstarch and roll out mochi. You’ll want the dough to be 1/4 of an inch or more in thickness (if too thin, it may break when covering the ice cream center). You can flatten the dough with the palms of your hands if you prefer. You can use a 3” (or larger) round biscuit cutter to cut out mochi forms, or roll them out in circles without cutting them out.
3. Dust the tops of the mochi circles with cornstarch. Place them on the parchment-lined cookie sheet and refrigerate.
Shape the Mochi Ice Cream
Take your mochi circles out of the fridge. Working on one mochi at a time, place an ice cream ball in the center. Pull up the mochi around the ice cream and pinch the edges together to form the bottom of the mochi.
Freeze Mochi
Immediately after making the mochi, place each one in the freezer. Remove before serving and cut in half or eat whole!
Storage
Once the mochi is frozen, wrap each one in plastic wrap. Place the mochi in a freezer bag or container and keep in your freezer for up to 3 months.
